Guardian Fish (also called “special” fish) are rare fish species that can only be caught using a Blessed or Cursed Fishing Rod or better.
There is a total of 7 Guardian Fish you can catch in the game.
Unlike Normal Fish, Guardian Fish cannot be kept in your inventory. Once caught, they will be returned to the water. You can check your progress by looking for their portraits in the Fishing Log on your bookshelf.

Note: All Guardian Fish require either a Cursed or Blessed Fishing Rod to catch. These are the 6th and 7th level upgrades for the Fishing Rod, just before the Mythic level upgrade.
